Gluten Free Potato, Leek & Chorizo Soup
MAGGI Gluten Free Potato & Leek Soup Mix makes a great base for the spicy flavours of chorizo.

- 270 g MAGGI Gluten Free Potato & Leek Soup Mix
- 1.55 L Cold Water
- 230 g Diced Chorizo
- 150 g Diced and blanched Leeks
Preparation

1In a saucepan, mix 200mL of water with soup mix to form a slurry. Add the remaining water and stir. Turn on heat and bring to the boil, stirring constantly.

2Reduce heat and simmer for 10 minutes, stirring constantly.

3In a separate pan fry the chorizo. Add to the soup.

4Add leeks and garnish with cream. Serve.

5Suggestion: Garnish with pan-fried diced chorizo and potato, fresh leek blanched and micro parsley.
