Serve a creamy and nutritious broccoli and leek soup with our simple recipe. Fit to serve many people at a time, you can make this delicious soup easily by combining MAGGI Crème of Broccoli Flavoured Soup Mix, chopped, bite-sized broccoli pieces, and blanched leeks. You can also garnish the soup with toasted almonds, sourdough croutons, and fresh broccoli for extra flavour. Make sure you stir constantly when cooking the soup to achieve the right, thick consistency. With our recipe, you can make up to 10 portions of soup at a time.

Ingredients
  • 430 g MAGGI Crème of Broccoli Flavoured Soup Mix
  • 1.8 L Cold Water
  • 255g Frozen and chopped Broccoli
  • 130g Chopped and blanched Leeks

    In a saucepan, mix 200mL of water with soup mix to form a slurry. Add the remaining water and stir. Turn on heat and bring to the boil, stirring constantly.

    Reduce heat and simmer for 2 minutes, stirring constantly.

    Add broccoli and leeks.

    Re-heat and serve.
