Gluten Free Chicken Fricassee
A nourishing gluten free main that will make a great addition your healthcare menu.
Ingredients

- 90g MAGGI Gluten Free Crème of Chicken Soup Mix
- 40g MAGGI Natural Mashed Potato
- 600mL cold water
- 300mL soaked, cooked cream
- 20 mL diced olive oil
- 20g butter
- 2 sliced onions
- 2 crushed cloves garlic
- 1.5kg diced chicken thigh fillet
- 400g sliced button mushrooms,
- 1 sprig rosemary or thyme
- 150g frozen green peas
Preparation

1Mix 100mL of water with MAGGI Gluten Free Crème of Chicken Soup Mix to form a slurry. Set aside.

2In a saucepan add the remaining water and bring to boil. Reduce heat to a simmer, add slurry and whisk till combined, add cream and bring to the boil.

3Meanwhile, place olive oil and butter in a saucepan with sliced onions and cook on a low heat without colour for 7 minutes.

4Add garlic and chicken and cook for a further 5 minutes.

5Add chicken soup, mushrooms and herbs. Put a lid on and cook gently over a low heat, stirring occasionally for 15-20 minutes.

6Add peas and thicken by gently whisking in the MAGGI Mashed Potato. Cook for 3 minutes.
