  • White wine vinegar ml 200
Spiced roasted White Chocolate Parfait
  • Nestle Docello Arctic White Chocolate gr 350
  • Eggs ea 10
  • Caster sugar gr 40
  • Water ml 60
  • Cream pouring ml 700
  • Cinnamon quill gr 10
  • Star anise gr 10
  • pear ea 8
  • Olive oil ml 100
  • Unsalted butter gr 80
  • Caster sugar gr 80

    Roast NESTLÉ Docello Arctic White Chocolate with spices for 8 mins at 160C

    Pass white chocolate through strain sieve

    Add eggs to mixer

    Bring sugar and water to 118C

    Bring eggs and sugar to sabayon

    Whip cream to stiff peaks
