- Vanilla paste gr 6
Orange Buerre Noisette
- Orange ea 2
- Unsalted butter gr 100
Sour Honey
- Honey gr 100
- White wine vinegar ml 200
Spiced roasted White Chocolate Parfait
- Nestle Docello Arctic White Chocolate gr 350
- Eggs ea 10
- Caster sugar gr 40
- Water ml 60
- Cream pouring ml 700
- Cinnamon quill gr 10
- Star anise gr 10
- pear ea 8
- Olive oil ml 100
- Unsalted butter gr 80
- Caster sugar gr 80
Preparation

1Spiced roasted white chocolate parfait

2Roast NESTLÉ Docello Arctic White Chocolate with spices for 8 mins at 160C

3Pass white chocolate through strain sieve

4Add eggs to mixer

5Bring sugar and water to 118C

6Bring eggs and sugar to sabayon

7Add chocolate to sabayon

8Whip cream to stiff peaks

9Fold chocolate and cream together

10Sesame and orange biscuit

11Combine Cream, butter and sugar/vanilla

12Add flour and UNCLE TOBY'S OATS

13Bake at 160C for 15 mins

14Crush biscuit

15Add salt, buerre noisette and orange zest

17Bring vinegar and honey to boil
