Beef Brisket with Mustard Gravy Recipe

Tender sous vide beef brisket served with a rich mustard gravy made with bourbon, wholegrain mustard, Dijon mustard and MAGGI® Classic Rich Gravy Mix.

Ingredients
  • 10 portions (approximately 3 kg) beef brisket, sous vide
  • 30 g butter or oil
  • 180 g brown onion, finely diced
  • 100 mL bourbon
  • 140 g wholegrain mustard
  • 40 g Dijon mustard
  • 1 L water
  • 120 g MAGGI® Classic Rich Gravy Mix
  • 3 g black pepper

    Reheat the brisket as per pack directions.

    In a saucepan, sweat the onion in the butter or oil until softened.

    Deglaze with the bourbon and reduce by two-thirds.

    Add the wholegrain mustard, Dijon mustard and half of the water, then bring to the boil.

    In a bowl, whisk the remaining water with MAGGI® Classic Rich Gravy Mix to form a smooth slurry.

    Pour the slurry into the boiling liquid, return to the boil and simmer for 1–2 minutes.

    Season with black pepper and serve with the brisket.
