Roasted Porchetta with Mediterranean Vegetables and Gravy

Ingredients
- 2.5 to 3 kg Porchetta Roll | Air dry over night
- 100ml Olive Oil
- Salt & Pepper | to your liking
- 500ml water
- 50g MAGGI Golden Roast Gravy
- 600g Broccolini | Cooked
- 1kg Baby potatoes | Roasted
- 500g Dutch Carrots | Roasted
- 300g Red Capsicum | Roasted
- 200g Red Onion | Roasted
Preparation

1Rub the pork skin lightly with oil & salt, cook to your liking, rest before carving

2Bring half of the water (250g) to the boil

3Make a slurry by combining the remainder of the water (250g) & MAGGI Golden Roast Gravy

4Pour slurry into the Boiling water and simmer for 1-2 minutes

5Serve with Roasted Broccolini, Baby potatoes, Dutch Carrots, Red Capsicum, Red Onion
