Ingredients
  • 50ml Oil
  • 200g Onion Finely Diced | 1
  • 500g Diced Eggplant | 1
  • 10g Garlic | Crushed
  • 250g French Lentils | Cooked
  • 250g Black Beans | Drained
  • 20g Burrito Spice Mix
  • 100g BUITONI Sugo per Pasta
  • 25g MAGGI Legendary BBQ Sauce
  • 300g Cooked Basmati Rice | Braised
  • 100g Avocado Salsa
  • 100g MAGGI Salsa Roja
  • 50g Sour Cream
  • 10 Coriander Leaves

    In a large fry pan, sauté onions and eggplant until golden.

    Add garlic, lentils and spices.

    Add BUITONI Sugo per Pasta & MAGGI Legendary BBQ Sauce.

    Place rice in the bowl, top with vegetable mix, avocado salsa, MAGGI Salsa Roja, sour cream and coriander.
