Christmas Turkey With Flamed Cherry Gravy
This classic gravy and roast with a creative cherry twist is the perfect addition to your Christmas buffet menu. Aussies loves their gravy, so this is bound to be a crowd pleaser, and our MAGGI Golden Roast Gravy Mix simplifies prep to make things easier for bulk catering this festive season.
Ingredients
Turkey
- 1x size 6 turkey | 6kg
- Garden herbs | sage, thyme, rosemary
- 100g butter
- 20ml olive oil
- Pepper & salt | to taste
Gravy
- 100g MAGGI Golden Roast Gravy Mix
- 1 litre water | stock
- 160g cherries | pitted
- 50ml brandy
Stuffing Bonbon (Perfect for mopping up the gravy)
- 20ml olive oil
- 50g butter
- 140g onion | small diced
- 2g sage | fresh chopped
- 2g thyme | fresh chopped
- 2g rosemary | fresh | chopped
- 5g MAGGI Chicken Flavoured Booster
- 350g sour dough crumb (Use up your left-over sour dough)
- 100g almonds | slivered | toasted
- 2 eggs
- Pepper
Sides
- 500g seasonal greens | cooked
- 800g potatoes | roasted
Preparation

1Set your oven to preferred setting, fan forced 180°C or Combi Steam.

2Rub the turkey with seasoning and rustic herbs.

3Mix butter and rustic herbs together and push under the skin of the turkey.

4Cook the turkey until golden brown and the internal temperature is above 75°C, rest for 30 minutes.

5For the Stuffing: In a frypan add the oil, butter, onion and herbs. Cook until tender, season with MAGGI Chicken Flavoured Booster and cool.

6Mix with the sour dough crumbs, almonds, eggs and pepper. Shape into a log and roll in baking paper and foil. Bake for 20 minutes, carve and serve.

7For the Gravy: Flame the cherries in brandy and add to the MAGGI Golden Roast Gravy, made as per tub instructions.

8Serve the turkey with sides, stuffing & Flamed Cherry Gravy
