Ingredients
  • 57 units of Ready Bake 56mm Chocolate Shortbread Shells
  • 340g NESTLÉ Continental Bitter Kibble Dark Couverture Chocolate 15kg x 1
  • 150g NESTLÉ Chocettes Small Bits Dark Compound Chocolate 15kg x 1
  • 230g Butter
  • 200g Eggs
  • 225g Plain Flour
  • 2g Baking Powder
  • 75g Walnuts
  • 375g Sugar
Preparation

    Melt butter & NESTLÉ Continental Bitter Kibble Dark Couverture Chocolate together in a bowl over a water bath.

    In a separate bowl, whip sugar and eggs together until aerated and creamy.

    Add melted chocolate mix to sugar & eggs & mix until combined.

    Sieve the flour & baking powder adding it to the mix, blend evenly.

    Fold through NESTLÉ Chocettes Small Bits Dark Compound Chocolate & walnuts.

    Pipe into Ready Bake 56mm Chocolate Shortbread Shells.

    Sprinkle the top with NESTLÉ Chocettes Small Bits Dark Compound Chocolate & walnuts.

    Bake & 160°C for 10-12mins, allow to cool, then garnish with a rosette of chocolate mousse & a white chocolate garnish.
