Cheesy Potato Fans

Steaming roasted potatoes layered with gouda cheese, infused with the taste of vegetables and finished with sour cream and chives.


    • 1kg medium potatoes
    • 30g MAGGI® Vegetable Booster
    • 50ml olive oil
    • 300g gouda cheese*, sliced
    • 150g sour cream*
    • 1 tbsp chives, finely chopped
    • Freshly ground black pepper & salt


    • Preheat the oven to 200°C.
    • Scrub and rinse the potatoes but do not peel them.
    • Make deep incisions every 3-4 mm making sure not to cut all the way through the potato,
    • but close to bottom of the potato.
    • Line an oven tray with baking paper.
    • Dust the potatoes with MAGGI® Vegetable
    • Booster, sprinkle with a little olive oil, and arrange them on the baking paper.
    • Roast in the oven for 30 minutes.
    • Remove potatoes from the oven and insert thick slices of cheese in the incisions.
    • Return to the oven and continue to roast for 15-20 minutes.
    • Remove from the oven and allow to cool for about 10 minutes and salt to taste.
    • Serve with sour cream and chives as garnish. 


    • When cutting the potato, place a chopstick on either side of the potato to prevent cutting straight through.
    • For richer flavour, sprinkle parmesan cheese over the top with a light dusting of smoked paprika.
    • For a non-vegan/vegetarian option, alternate cheese slices with bacon pieces
