If you'd like to add a simple and classic English meal to your menu, look no further than spicy beans with avocado and toasted bread. Prepare this quick and easy meal using BUITONI Sugo al Pomodoro (Coulis) and remember to cook your beans over low heat. Reduce the heat you simmer your beans at and stir and check occasionally to make sure your beans are not overcooked, yet also at the perfect level of mushiness. You can also check your seasoning as you go (with salt and pepper). To make your meal a little more interesting, you can top your beans with an over-easy egg and season slightly.

Ingredients
  • 30 mL Olive Oil
  • 150 gr Chopped Finely Onion
  • 1 Crushed Clove of Garlic
  • 2 Chopped Birds Eye Chillis
  • 420 gr Drained Mixed Beans
  • 400 gr BUITONI Sugo al Pomodoro (Tomato Coulis)
  • Salt to Taste
  • 10 Thick Slices of Sourdough Bread
  • 5 Quatered Avocados
  • Boiling Water (Dash of White Vinegar Added)

    Heat olive oil in a pan and cook onions over a low heat for 2-3 minutes.

    Add garlic and chilli and cook for a further minute.

    Increase heat, add beans and BUITONI Sugo al Pomodoro (Coulis) and bring to boil.

    Reduce heat and simmer covered, stirring occasionally. Check the seasoning and put to one side.

    To serve spoon spicy bean mixture onto serving dish. Place 2 pieces of avocado and one slice of toasted bread on the side.

    Poach the eggs and drain. Place one egg top of beans, season with salt.
