Gluten Free Pumpkin & Sweet Potato Soup with Mint

Ingredients

- 30mL olive oil
- onion sliced
- 2 crushed cloves garlic
- 1kg peeled & diced sweet potato
- 4 tomatoes
- 2L vegetable stock
- 300g MAGGI Gluten Free Pumpkin Soup Mix
- 1 bch mint
- sour cream for garnish
Preparation

1Saute the onions and garlic in the olive oil for 4 minutes.

2Add the sweet potato, tomatoes and vegetable stock and bring to boil.

3Mix the MAGGI Gluten Free Pumpkin Soup Mix with a little cold water to form a paste and whisk into the pot. Simmer until the sweet potato is soft.

4Blend the soup with a stick blender until smooth.

5Serve with some sour cream and some shredded mint.
