Ingredients

  • 30mL olive oil
  • onion sliced
  • 2 crushed cloves garlic
  • 1kg peeled & diced sweet potato
  • 4 tomatoes
  • 2L vegetable stock
  • 300g MAGGI Gluten Free Pumpkin Soup Mix
  • 1 bch mint
  • sour cream for garnish
Preparation

    Saute the onions and garlic in the olive oil for 4 minutes.

    Add the sweet potato, tomatoes and vegetable stock and bring to boil.

    Mix the MAGGI Gluten Free Pumpkin Soup Mix with a little cold water to form a paste and whisk into the pot. Simmer until the sweet potato is soft.

    Blend the soup with a stick blender until smooth.

    Serve with some sour cream and some shredded mint.
