Mocha and Dark Chocolate Croquembouche

Ingredients
- 250ml Milk
- 125g NESTLÉ Docello™ Chocolate Mousse Mix
- 15g Nescafé Gold instant coffee
- 38-42 Ready Bake Profiteroles
- 300g NESTLÉ Royal Dark Chocolate Couverture
- Note: You will need a sugar thermometer for this recipe
Preparation

1Place milk in a bowl and add NESTLÉ Docello™ Chocolate Mousse Mix and Nescafé Gold instant coffee.

2Use balloon whisk and mix on medium speed for 1 minute. Scrape sides of bowl and increase mixing speed to high and mix for 6 minutes.

3Transfer mix to piping bag with a small nozzle and pipe into the Profiteroles.

4Place 200g of the NESTLÉ Royal Dark Chocolate Couverture in a bowl; melt over a bain-marie of gently simmering water.

5Heat the chocolate until the temperature reaches 45°C using a cooking thermometer. Remove the bowl from the heat and stir in the remaining 100g chocolate. Keep stirring.

6As soon as the temperature cools to 27°C, return the bowl to the bain-marie and reheat, stirring gently until the chocolate reaches 32°C.

7When the chocolate is smooth and shiny, it is ready to be used to stick the filled profiteroles together.

8Dip the filled profiteroles partially in the chocolate and arrange them in a pyramid on a plate. Drizzle remaining chocolate over the completed pyramid.
