Mixed Berry Swiss Roll
A mixed berry swiss roll is the perfect snack to serve during tea time. You can prepare one easily with a NESTLÉ Docello® Crème Pâtissiére berry mix. First bake the swiss roll before spreading the NESTLÉ Docello® Crème Pâtissiére and NESTLÉ Docello® Mixed Berry Mousse on top. Afterwards, roll the swiss roll with the berry mix in the middle, dust with icing sugar, slice, and serve. Our recipe is fit for up to 10 portions of swiss roll slices. Our dessert chefs recommend garnishing each slice with mixed berries and cream.
Ingredients
Swiss Roll
- 4 Separated Eggs
- 175g Sugar
- 1tsb Vanilla Essence
- 90g Cornflour
- 3tbsp Plain Flour
- 1.5tsp Baking Powder
Mixed Berry Mix
- 125g NESTLÉ Docello® Crème Patissiere Mix
- 300g NESTLÉ Docello® Mixed Berry Mousse Mix
- 250mL Chilled Water
- 5 g Vanilla Esscence
- 10 g Icing Sugar
Preparation

1Method (Swiss Roll) Place egg whites in bowl and soft whip egg whites and sugar.

2Add yolks and vanilla to whipped whites.

3Gently fold sifted flour and baking powder

4Line a gastronorm tray with baking paper. Spread mix onto baking paper about 1cm thick. Bake at 170°c for 15-20mins until golden and bouncing back.

5Allow to cool.

6Method (Mixed Berry Mix) Prepare the NESTLÉ Docello® Crème Pâtissiére as per pack directions with chilled water.

7Prepare the NESTLÉ Docello® Mixed Berry Mousse as per pack instructions with chilled water.

8Fold NESTLÉ Docello® Crème Pâtissiére mix with NESTLÉ Docello® Mixed Berry Mousse Mix and vanilla essence.

9Spread Crème Pâtissiére & mousse mix filling over cooled swiss roll. Gently roll.

10Dust with icing sugar, slice and serve.
