Chocolate Dulce de Leche Slice
An everyday creation elevated to taste sensation. Total time 55 minutes + 2 hours setting time. Makes 1 Slab 5x24x14cm or Makes 10 slices cut at 4.5cm x 6cm
Ingredients
Shortbread Crust
- Unsalted butter Grams 113
- Brown sugar Grams 90
- Vanilla extract Grams 2.5
- Salt Grams 2
- All-purpose flour Grams 150
Chocolate Dulce De Leche
- Thickened cream Grams 200
- NESTLE Caramel Top' N' Fill Grams 200
- Whole eggs Whole 3
- NESTLÉ Continental Bitter Kibble Dark Couverture Chocolate (Finely chopped) Grams 120
Preparation

1Shortbread

2Preheat oven to 175c.

3Beat together butter, sugar, vanilla and salt till combined.

4Add in sifted flour, mix till dough forms.

5Roll out dough roughly 1cm thick.

6With a 5x24x14cm rectangle frame, cut out dough to make a clean cut.

7Bake in frame until golden, 25 minutes.

8Cool completely.

9Once cooled, brush base with melted chocolate.

11Bring cream and caramel to a simmer in a small saucepan, whisking until caramel has dissolved.

12Whisk together yolks in a bowl, then slowly whisk in hot cream mixture.

13Return to the pan and cook over medium heat.

14Whisking till mixture reaches 82˚c.

15Quickly remove and add chocolate, once mixed using a stick blender emulsify the mixture till smooth.

16Pour mix on top of shortbread, refrigerate covered for 2 hours or until set.

17Cut to serve.
