    Preheat oven to 175c.

    Beat together butter, sugar, vanilla and salt till combined.

    Add in sifted flour, mix till dough forms.

    Roll out dough roughly 1cm thick.

    With a 5x24x14cm rectangle frame, cut out dough to make a clean cut.

    Bake in frame until golden, 25 minutes.

    Cool completely.

    Once cooled, brush base with melted chocolate.

    Bring cream and caramel to a simmer in a small saucepan, whisking until caramel has dissolved.

    Whisk together yolks in a bowl, then slowly whisk in hot cream mixture.

    Return to the pan and cook over medium heat.

    Whisking till mixture reaches 82˚c.

    Quickly remove and add chocolate, once mixed using a stick blender emulsify the mixture till smooth.

    Pour mix on top of shortbread, refrigerate covered for 2 hours or until set.
