Roast Beef with Seeded Mustard & Chive Demi-Glace
Succulent slices of roast beef accompanied by creamy mashed potatoes, earthy mushrooms, and vibrant broccolini, all enhanced by a luscious mustard & chive demi-glace sauce.
Ingredients
- 4kg Beef Carvery Roast, cooked
Mustard Chive Demi-Glace
- 75ml Brandy or Bourbon whisky
- 90g Seeded Mustard
- 8g Chives | Chopped Semi dried
- 650ml Water
- 75g MAGGI® Demi-Glace Sauce Mix
Mashed Potato
- 600ml Water
- 400ml Milk or Cream
- 200g MAGGI® Natural Mashed Potato
- 150g Butter
- Salt & pepper to taste
- 16 Field Mushrooms, cooked
- 4 Bunches broccolini, cooked
Preparation

1Heat Roast Beef as per back of pack instructions.

2In a medium saucepan combine the brandy, seeded mustard and chives and simmer 1-2 minutes to reduce the alcohol content by about half. Then add 325 ml of the water and bring to a simmer.

3Mix the remaining 325ml of the water with the MAGGI® Demi-Glace Sauce Mix to form a slurry then whisk into the simmering mustard and brandy liquid and cook a further 2-3 minutes until glossy and saucy, set aside.

4For the creamy mashed potato, bring the water to the boil, add the milk then remove from the heat and whisk in the MAGGI® Natural Mashed Potato then stir in the butter and seasoning and set side. (Stir again before serving).

5Serve the sliced roast beef with the creamy mash, mushrooms and broccolini spoon over the mustard & chive demi-glace.
