Nestlé Professional and the National Indigenous Culinary Institute (NICI) are proud to announce a new partnership aimed at fostering Indigenous culinary talent through mentorship, skills development, and training opportunities.
This collaboration reflects a shared commitment to creating an inclusive, sustainable, and thriving foodservice industry for the next generation of chefs.
The NICI program has already made a significant impact on young apprentice chef Allen Miller, connecting him with the esteemed Newcastle seafood restaurant, Scratchleys on the Wharf. Through NICI’s guidance, Allen has transformed his passion for cooking into a promising career.
Allen shared, “NICI provided my first knife set and chef’s uniforms, which prepared me from day one and made me feel valued.”
"My aspiration is to become a highly qualified chef and work in the best restaurants worldwide. Starting my new role as a kitchenhand in a fast-paced environment was challenging, but my NICI mentor helped me adapt to the demands of full-time work as an apprentice,” Allen explained.
Since its inception in 2012, NICI has delivered essential training programs for Aboriginal and Torres Strait Islander individuals, equipping them with the skills needed to excel in the foodservice industry. Each year, NICI supports more apprentices and students with on-the-job training, creating valuable employment and career opportunities in Australia’s top restaurants. NICI's holistic approach includes skills development, financial support, and investment in mental health counselling to ensure chefs' resilience and long-term success.
NICI CEO Nathan Lovett stated, "At NICI, we recognize that working in foodservice requires more than just in-kitchen training. Entering the food industry can present challenges, especially when it involves relocating for a new role or acquiring necessary equipment. That's why we are committed to the wellbeing of Indigenous young chefs, assisting their transition into the industry and setting them up for success."

Apprentice chef Allen Miller is turning his passion for cooking into a promising career, thanks to the support of NICI and Nestlé Professional.
“With NICI's support, I felt confident entering culinary competitions this year, including the Nestlé Golden Chef’s Hat Award. I wanted to challenge myself against my peers, improve my skills, and gain as much experience as possible. As a first-year apprentice, I learned so much by working with fresh produce and refining my plating creativity."
“For any Indigenous students aspiring to enter the culinary industry, I encourage you to explore as many opportunities as possible and seek guidance from mentors early in your career,” Allen advised.
