Method (Swiss Roll)
- Place egg whites in bowl and soft whip egg whites and sugar.
- Add yolks and vanilla to whipped whites.
- Gently fold sifted flour and baking powder
- Line a gastronorm tray with baking paper. Spread mix onto baking paper about 1cm thick. Bake at 170°c for 15-20mins until golden and bouncing back.
- Allow to cool.
Method (Mixed Berry Mix)
- Prepare the NESTLÉ Docello® Crème Pâtissiére as per pack directions with chilled water.
- Prepare the NESTLÉ Docello® Mixed Berry Mousse as per pack instructions with chilled water.
- Fold NESTLÉ Docello® Crème Pâtissiére mix with NESTLÉ Docello® Mixed Berry Mousse Mix and vanilla essence.
- Spread Crème Pâtissiére & mousse mix filling over cooled swiss roll. Gently roll.
- Dust with icing sugar, slice and serve.
