1. In a jug mix 400ml of water with the MAGGI Minestrone Soup Mix to form a slurry.
2. In a saucepan add the remaining water and bring to the boil. Reduce heat to simmer and add soup slurry, whisking till combined.
3. Reduce heat, add mixed beans and vegetables and simmer with lid on for 30 minutes, stirring occasionally.
4. Stir through the grated cheese prior to serving
