Chunky Homestyle Minestrone Soup

This is a great nourishing snack recipe that is rich in fibre and a source of protein and calcium. Try jazzing it up with melted chocolate, applying a drizzle before slicing or dipping in half a cut slice for a two-tone version.

Ingredients

  • 3.2L cold water 
  • 340g MAGGI Minestrone Soup Mix 
  • 600g drained, rinsed canned 3 bean mix
  • 300g mixed vegetables, frozen 
  • 200g parmesan cheese, grated
     

Method

1.    In a jug mix 400ml of water with the MAGGI Minestrone Soup Mix to form a slurry. 
2.    In a saucepan add the remaining water and bring to the boil.  Reduce heat to simmer and add soup slurry, whisking till combined.
3.    Reduce heat, add mixed beans and vegetables and simmer with lid on for 30 minutes, stirring occasionally.
4.    Stir through the grated cheese prior to serving
