Tomato Green Mussels tossed with Linguine

Instructions

  1. Cook pasta in a large saucepan of boiling, salted water until tender. Drain. Toss in oil. Cover to keep warm.
  2. Meanwhile, cook mussels in a large saucepan of boiling water for about 5 minutes or until shells open (discard any that do not). Drain.
  3. Heat extra oil in a large saucepan. Add onion, chillies and garlic. Cook, stirring, until onion is soft. Stir in tomato paste and oregano. Add BUITONI Sugo al Pomodoro. Bring to boil. Simmer for 10 minutes. Add mussels and olives. Simmer 5 minutes. Remove pan from heat. Add pasta. Toss to combine.
  4. Garnish mussel linguini with parmesan.
