Thai Cous Cous Vegetable Bake

Instructions

  1. Preheat oven to 180°C.
  2. Make up cous cous according to directions on packet, press lightly into base of greased 32cm x 26cm baking pan.
  3. Heat oil in pan, add vegetables, cook 3 minutes. Add MAGGI Taste of Asia Laksa Paste, cook 1 minute.
  4. Add combined MAGGI Coconut Milk Powder, cornflour and water. Bring to boil stirring, remove from heat, cool slightly, stir in eggs. Spoon sauce over cous cous.
  5. Combine remining ingredients, sprinkle over sauce. Bake 15 to 20 minutes until golden.
