Method

Spiced roasted white chocolate parfait

  1. Roast NESTLÉ Docello Arctic White Chocolate with spices for 8 mins at 160C
  2. Pass white chocolate through strain sieve
  3. Add eggs to mixer
  4. Bring sugar and water to 118C
  5. Bring eggs and sugar to sabayon
  6. Add chocolate to sabayon
  7. Whip cream to stiff peaks
  8. Fold chocolate and cream together

Sesame and orange biscuit

  1. Combine Cream, butter and sugar/vanilla
  2. Add flour and UNCLE TOBY'S OATS
  3. Bake at 160C for 15 mins
  4. Crush biscuit
  5. Add salt, buerre noisette and orange zest

Sour Honey

  1. Bring vinegar and honey to boil

Orange Buerre Noisette

  1. Bring batter to buerre noisette
  2. Zest orange
  3. Add zest to buerre noisette
