Chocolate Dulce de Leche Slice

An everyday creation elevated to taste sensation. Total time 55 minutes + 2 hours setting time. Makes 1 Slab 5x24x14cm or Makes 10 slices cut at 4.5cm x 6cm

    Method

    Shortbread

    1. Preheat oven to 175c.
    2. Beat together butter, sugar, vanilla and salt till combined. 
    3. Add in sifted flour, mix till dough forms. 
    4. Roll out dough roughly 1cm thick.
    5. With a 5x24x14cm rectangle frame, cut out dough to make a clean cut. 
    6. Bake in frame until golden, 25 minutes. 
    7. Cool completely. 
    8. Once cooled, brush base with melted chocolate. 

    NESTLÉ Chocolate

    1. Bring cream and caramel to a simmer in a small saucepan, whisking until caramel has dissolved. 
    2. Whisk together yolks in a bowl, then slowly whisk in hot cream mixture. 
    3. Return to the pan and cook over medium heat. 
    4. Whisking till mixture reaches 82˚c. 
    5. Quickly remove and add chocolate, once mixed using a stick blender emulsify the mixture till smooth. 
    6. Pour mix on top of shortbread, refrigerate covered for 2 hours or until set.
    7. Cut to serve.
