Chocolate Délice with Vanilla Cream

Chocolate Délice

  1. Combine NESTLÉ Docello® No Bake Egg Custard Mix with 1/3 milk until smooth.
  2. Bring remaining milk to boil then stir in prepared custard mix.
  3. Return to boil, simmer for 3 minutes stirring continuously.
  4. Add chocolate and stir until combined.
  5. Pour into moulds and allow 2 hours (minimum) to chill until set.

 

Pistachio Crush 

  1. Roast pistachio at 170 degrees for 10 mins.
  2. In a heavy sauce pan melt sugar until it reaches golden amber colour then add pistachio.
  3. Place pistachio mixture in a robo coupe until it becomes paste.
  4. Crush bran flakes then add pistachio paste and combine well.

 

Vanilla Bean 

  1. Split vanilla pod and scrape vanilla bean.
  2. Whip thickened cream and vanilla bean together.

Assembly

  1. Place délice onto centre of shallow bowl.
  2. Place a quenelle of vanilla cream on top.
  3. Sprinkle with pistachio dust, leave some whole roasted pistachio halves for more texture.
  4. Add white chocolate curl.
