Instructions

Double Chocolate Mousse 

  1. Place chilled milk (<4 ̊C) into a bowl and add correct amount of Mousse mix. 
  2. Use a balloon whisk attachment and mix on medium speed for
  3. 1 minute or until mixture is fully combined. Add in Dark Morsels. 
  4. Resume mixing on high speed for 6 minutes.


Chocolate Brownie

  1. Melt the butter and dark chocolate buttons together in a pot over a low heat and then chill slightly.
  2. Sift plain flour and cocoa powder together in a large mixing bowl.
  3. Place the white and milk chocolate buttons into a food processor until you get small choc chips.
  4. Whisk the eggs and sugar together in a mixing bowl until light and milkshake looking.
  5. Fold the chilled butter and chocolate mix into the egg mix.
  6. Fold this mix into the flour and cocoa powder mix with the chocolate.
  7. Place into a lined tray and bake (approx. 2cm thick), then cool.
  8. Cut into 8cm diameter circles.

Assembly

  1. Place 1 layer of brownie onto the board.
  2. Top with a large scoop of double choc mousse.
  3. Sprinkle with toasted coconut.
  4. Top with another piece of brownie. 5. Serve with berry compote in a small bowl / jug.
