HARVEST GOURMET® Plant-Based Schnitzels with MAGGI® Supreme Gravy

Method

10 HARVEST GOURMET® Plant-Based Schnitzels 
100gm MAGGI® Supreme Gravy Mix
1Lt water
1Kg pre prepared Sweet Potato Chips
100ml Olive oil
2 Red Capsicum; Thinly sliced into strips
2 Carrot; Sliced into Julienne 
500gm Baby Roquet leaves 
2 Spanish Onion Thinly sliced into strips
100ml Fresh lemon juice
100ml Extra Virgin olive oil

  1. Blanch Sweet Potato Chips, toss with olive oil, rock salt & freshly ground black pepper then roast in 200-degree oven for approx. 20 mins or until fully cooked & crisp, then keep in a warm oven.
  2. Prepare MAGGI® Supreme Gravy as per on pack directions, then set aside to gently simmer.
  3. Combine all prepared salad ingredients in a bowl. For the salad dressing combine the lemon juice & olive oil in a separate container & put aside for plating.
  4. Gently deep fry the HARVEST GOURMET® Plant-Based Schnitzels until golden brown.
  5. To plate up simply arrange the HARVEST GOURMET® Plant-Based Schnitzel on your desired serving ware, arrange a small pile of the roasted sweet potato chips & generous amount of the roquet salad on each plate, then just before serving drizzle the olive oil & lemon juice mixture over your salad then finish with a hearty amount of MAGGI® Supreme Gravy on top or in ramekin on the side.
