HARVEST GOURMET® Chargrilled Pieces

30ml olive oil
1 lemon, juice
2 tablespoons red wine vinegar
2 teaspoons dried oregano
2 teaspoons Italian dried herbs
3 garlic cloves, crushed
550g HARVEST GOURMET® Vegetarian Chargrilled Pieces
5 baby cos lettuce, washed, quartered
2 telegraph cucumbers, deseeded, sliced
5 Roma tomatoes, deseeded, diced
2 Spanish onions, sliced
3 avocados, sliced
100g pitted kalamata olives, chopped
50ml sherry vinegar
100ml extra virgin olive oil
60g grain mustard
Mix half the olive oil, lemon juice, red wine vinegar, oregano, Italian herbs and garlic with the HARVEST GOURMET® Vegetarian Chargrilled Pieces. Heat the remaining oil in a frying pan and cook together for 4-5 minutes, set aside.
Combine the dressing ingredients together, set aside.
Arrange the salad ingredients onto a serving plate or platter and add the Chargrilled Pieces.
Mix the dressing ingredients and spoon over the salad and serve.
